Conclusion for Overall Concentration
Thank you to all the instructors, Chef and sponsors of this concentration. I am grateful that even through all the road stops that they were able to make this concentration happen. even though many things were changed from the original plans, it was still a very thoughtful concentration. The structure of the classes were very educational and I learned a lot from this course. In the future I will make sure to use all the skills and knowledge I learned in my career in this industry. I am very glad we were able to receive a Bronze Level Japanese Cuisine certification despite being told earlier that it was not possible to receive due to COVID.
This class was very informative and relaxing and I am glad we slowly got introduced to these new dishes and techniques. I learned to use chopsticks to cook and I got to work with many tools that I have never used. We were able to get some traditional Japanese ingredients and I learned a wide range of dishes and techniques. The structure of the class was really nice as we went from basic to advanced to Inspiration. I really enjoyed that were able to have an inspiration class in which we were able to be creative and make our ideas without being restrained to stay traditional. I still love traditional food though, I am glad that we took things slow at first and we went through traditional knife cuts, cooking techniques and ingredients. Learning about dashi, rice and more basics we moved onto advanced. In Advanced we made more dishes using the stuff we learned in Advanced. This class was helpful in deepening our understanding of traditional food and how to make a kaiseki meal. In Japan as Inspiration we were given the freedom to make any dishes as long as its Japanese Inspired, it does not need to be traditional. I really enjoyed all the dishes that we all came up with. I like that we were able to get critiques at the end and learn how to better our dishes.
In this concentration we learned many skills and knowledge to help us to better understand the structure of Japanese Cuisine. In the future I want to be able to work in Japan, so the certification will help me out a lot. Having one semester left, planning my future has become a big priority and I am glad that I was able to take this concentration. Once again thank you to all who made this concentration possible!
