Conclusion for Advanced

This class went by fast and it was very informative and helpful in the learning more about Japanese cuisine. we spent the first seven days learning about different components of a traditional Kaiseki meal. After the seventh day we practiced and prepped for our final project of the class which is to create and serve a 9 course kaiseki for our sponsors and notable faculty members. For the eighth day we were able to practice both the proposed menu of chef and our own idea. Chef and Sam tasted our dishes and decided whether to keep the proposed or change the dish. I was given the task to make the appetizer for our meal, chef proposed a Nanban stlye Spanish mackerel, while I proposed a black sesame take on the gomatofu that we learned. Unfortunately, my idea was not passed, but I was glad that I was able to make this dish really from scratch from homemade black sesame paste. We all worked great as a team therefore even though there were some nerves, I believe that our kaiseki went smoothly. We all tried our best and we worked together to ensure that everyone was on time. The importance of service and timing will be very useful in the future with any meal. This class was very enjoyable, and I cannot wait for what Inspiration has in store for us !
